Washing Instructions: Rinse in warm soapy water using a microfiber towel to lightly remove excess chocolate and towel dry with a microfiber towel or paper towel. Never place moulds in dishwasher and do not use harsh chemicals. In doing so you will lose the shininess on your chocolate. Once dry polish each cavity with a cotton ball, microfiber towel, or soft paper towel. Never use regular hand towel or sponges on moulds as these can scratch your mould.
Precision-crafted for professional chocolate production, the Chocolate World CW1890 polycarbonate chocolate bar mold delivers the consistency and definition that executive pastry chefs and chocolatiers demand. Designed for the iconic Bueno bar silhouette, this mold brings sharp lines, clean releases, and flawless results to every batch, whether for hotel pastry counters, fine dining dessert courses, or high-volume catering production.
Polycarbonate chocolate bar molds are the industry standard for professional chocolate production, and the CW1890 exemplifies why. Engineered from food-grade polycarbonate, this mold offers exceptional dimensional stability, resisting warping and deformation even through repeated tempering cycles. The rigid structure ensures that every bar retains its intended shape, 118 x 21 x 15 mm, with sharp, well-defined edges and a mirror-smooth finish that speaks directly to the quality standards of luxury hospitality environments.
With a 1x9 cavity layout across a 275 x 135 x 24 mm frame, the CW1890 is optimized for efficient production runs. Each cavity yields a 34g bar, making portion control straightforward for hotel banquet teams, boutique chocolatiers, and high-end catering operations alike. The mold's compact footprint fits standard production lines without sacrificing output capacity.
One of the defining advantages of professional-grade polycarbonate chocolate bar molds over silicone chocolate bar molds is the surface quality of the finished product. Polycarbonate transmits the high-gloss sheen of properly tempered chocolate with unmatched clarity, producing bars that reflect light beautifully and require no additional finishing. For executive chefs and F&B directors presenting house-made chocolates as part of an amenity program, petit four selection, or branded gift offering, this level of finish is non-negotiable.
The CW1890's smooth interior walls and precisely engineered cavity geometry ensure effortless demolding, minimizing breakage and preserving the integrity of delicate bar designs even at production scale. This translates directly into reduced waste and a more consistent product across every service.
While silicone chocolate bar molds offer flexibility and ease of handling for smaller operations, polycarbonate remains the preferred choice in professional pastry kitchens for good reason. Polycarbonate molds maintain their shape under the thermal stress of repeated use, support precise tempering results, and deliver the high-gloss finish that defines premium chocolate work. For hotels, restaurants, and catering teams producing chocolate bars at scale, the durability and consistency of polycarbonate molds represent a measurable advantage in both quality and efficiency.
The Chocolate World CW1890 is fully dishwasher safe and built to withstand the demands of daily professional use, making it a reliable long-term investment for any pastry program.
Chocolate World is a benchmark brand in professional chocolate mold manufacturing, trusted by leading pastry chefs and chocolatiers across fine dining, luxury hospitality, and artisan confectionery. The CW1890 Bueno Bar mold is a testament to that expertise, combining technical precision with a design that translates beautifully into the finished product.
Whether you are developing a signature chocolate bar for your property's amenity program, crafting house-made confections for a tasting menu, or scaling production for a high-end catering event, the CW1890 delivers the performance, consistency, and finish that professional environments demand. Available exclusively at Pastry Chefs Boutique, alongside a comprehensive selection of professional chocolate bar molds, polycarbonate molds, and confectionery equipment curated for the hospitality industry.
